 2 Boneless Duck breast with fat
 4 tbsp honey - preferably local raw honey
 1 minced garlic clove
 6 sprigs fresh thyme (or 3 tsp dried thyme)
 2 tsp sea salt
 1 tsp black pepper
 ½ cup orange juice
 1 tbsp olive oil

This recipe requires ONE HOUR to marinate.

Pat each duck breast dry with paper towel. Score the fat of the duck breast on the diagonal without cutting into the meat.

Sprinkle the salt and pepper on both sides of the duck. Drizzle the honey on the fat side of each breast. Add the thyme and rub into the meat. Place both breasts into a ziploc bag and add the orange juice, minced garlic, and olive oil. Seal and ensure the breasts are covered with all the ingredients.

Let rest at room temperature for one hour!

Bring an iron skillet to medium heat. Drizzle additional olive oil on each breast fat side. Place each breast fat side down on the iron skillet and sear for 3-4 minutes.

Remove the skillet from the burner and place in the 375 degree oven for 6 minutes for medium-rare duck.

Remove from the skilet onto a cutting board and cover with foil for 5 minutes. Slice on the diagonal and serve
